To review recent advances and applications of Near Infrared Spectroscopy (NIRS) in honey authentication domain including constituents, adulteration, brand, botanical origin and geographical origin.

NIRS can be applied to the test of honey components, adulteration, botanical and geographical origin and also honey brands. Spectral collecting, spectral pretreatment and modeling technology are the indispensable parts of this technology, among which modeling technology is the core one. Future research is to be focused on increasing model robustness, developing overall NIR spectroscopic database and a NIR-based integrated technology system on honey quality assessment.

The prediction values of minor components such as PH, acidity, lactone, electric conductivity, HMF, turanose, kojibiose of honey are still unreliable. Most adulterated samples in the literature were not collected from market but from laboratory, which cannot reflect various adulterations in reality. Water interference with useful information has not yet been resolved technologically. Studies on identification of honey brands and geographical origin are far from enough to protect those honey products with high brand value in honey market. Stability and robustness remain to be improved due to deficiency in selecting representative samples.
